FRUIT GRANITAS 

  • 3/4 cup SUGAR
  • 2 TABLESPOONS FRESH LEMON JUICE
  • 3 cups of your favorite fruit, pureed
  • 4 dashes CECIL & MERL BITTERS

Place sugar and 1 cup of water in a small sauce pan. Cook over low heat, stirring until the sugar is dissolved. Add the puree and the lemon juice to the pan and stir. Pour mixture into a 13x9X2 metal baking pan. Freeze until ice begins to form around the edges, about 20 minutes. Using a fork, scrape the icy edges to the center of the pan. Repeat every 25 minutes for 1.5 hours. Finally, scrape with a fork to create icy crystals. Cover.

To serve, scoop into bowls.  Add a few dashes of our BITTERS and garnish with fruits and herbs.
